“German Ant Cake” (Ameisenkuchen) is a classic—light, buttery, and filled with chocolate sprinkles that look like little ants when sliced.
Here’s a traditional German style recipe with a rich chocolate glaze.
🐜 Traditional German Ameisenkuchen (Ant Cake)
Ingredients
For the cake:
- 225-250 g unsalted butter, softened
- 80- 200 g sugar (depending on how sweet you want it)

- 4 eggs
- 300 g whole wheat flour
- 20 g baking powder
- 210 ml milk
- 150 g chocolate sprinkles (German: Schokostreusel)
- Optional: 2 tbsp dark rum (very traditional for flavor)
For the chocolate glaze:
- 200 g dark chocolate (2 bars)
Instructions
1. Prepare the batter
- Preheat oven to 180°C / 350°F.
- Grease a deep baking pan.
- Cream butter, sugar, and vanilla until light and fluffy.
- Add eggs one at a time, mixing well after each.
2. Mix dry and wet
- Add flour and baking powder.
- Add milk to the batter.
- Stir until smooth (don’t overmix).
3. Add the “ants”
- Fold in chocolate sprinkles (and rum if using).
- The sprinkles should stay intact—not melt into the batter.
4. Bake
- Pour into pan and smooth the top.
- Bake for 25–35 minutes, until golden brown or a toothpick comes out clean.
🍫 Chocolate Glaze
5. Make the glaze
- Melt chocolate gently by using a double boiler or microwave in short bursts).
6. Finish
- Pour glaze over the hot cake.
- Let cool for a few hours before slicing.
Tips for Authentic Flavor
- Use fine chocolate sprinkles, not chocolate chips—they distribute better.
- A splash of rum or even rum flavoring gives it that old-school German bakery taste.
- You can also add a bit of powdered sugar dusting instead of the chocolate glaze for a simpler finish.
Enjoy with a glass of milk, cup of coffee or tea.
